Description

A tender, spiced loaf layered with roasted apples and a cinnamon-sugar swirl. This baked treat captures the cozy essence of autumn with a moist, cake-like crumb and pockets of cinnamon-kissed apples, minus the oil of fried fritters. Perfect for tea time or breakfast.

Ingredients

Scale

1/3 cup packed brown sugar (for cinnamon-sugar mixture)
1 teaspoon ground cinnamon (for cinnamon-sugar mixture)
2/3 cup granulated sugar
1/2 cup unsalted butter (softened to room temperature)
2 large eggs (room temperature)
1 1/2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk (whole or 2%)
3 cups peeled, grated apples (about 4 medium apples)
1/2 teaspoon ground cinnamon (for apple layer)
1 tablespoon brown sugar (for apple layer)

Instructions

Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a small bowl, mix brown sugar and 1 teaspoon ground cinnamon for the cinnamon-sugar mixture.
In another bowl, cream butter and granulated sugar until light and fluffy.
Beat in eggs, one at a time, then stir in vanilla extract.
Add flour and baking powder, alternating with milk, mixing just until combined.
Fold in 1/2 teaspoon cinnamon and 1 tablespoon brown sugar into 3 cups grated apples.
Spread half the batter into the loaf pan; layer the spiced apple mixture on top.
Spoon remaining batter over the apples, then sprinkle the cinnamon-sugar mixture evenly across the top.
Bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
Let cool slightly before slicing.

Notes

Use tart apples like Granny Smith for best results.
Chill the batter 30 minutes before baking for a moister crumb.
Store in an airtight container for up to 3 days.
Freeze slices in a single layer before wrapping for extended storage.
