Ingredients
For the crumb topping:
1 1/2 cups all-purpose flour
3/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
For the cake:
3 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
3/4 cup granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 cup milk
3 cups apples, chopped into 1/2 inch pieces
1 cup chopped pecans
For the glaze:
1 cup confectioners sugar
2 tablespoons milk
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
To make the crumb topping, combine flour, brown sugar, cinnamon, and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs, then set aside.
In a large bowl, whisk together flour, baking powder, cinnamon, and salt for the cake batter.
In a separate bowl, cream together the softened butter, light brown sugar, and granulated sugar until fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined.
Fold in the chopped apples and pecans.
Spread the batter evenly into the prepared pan.
Sprinkle the crumb topping generously over the cake batter.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before whisking the confectioners sugar and milk together to create a glaze, then drizzle over the cooled cake.
Notes
Store the cake in an airtight container at room temperature for up to 3 days. Use firm apple varieties like Granny Smith or Honeycrisp for the best texture. If you prefer a nut-free version, simply omit the pecans.
