Description

Indulge in a masterpiece that marries the rustic, comforting charm of an apple crumble with the silky, luxurious elegance of a classic baked cheesecake. This decadent treat features a spiced graham cracker crust, a velvety cream cheese center, a layer of fresh, tart apple slices, and a perfectly golden, crunchy oat crumble topping. It is a soulful, impressive dessert that brings warmth and nostalgia to any gathering, balancing rich, creamy textures with the bright, crisp snap of autumn apples.

Ingredients

Scale

1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
6 tablespoons unsalted butter, melted
1 teaspoon ground cinnamon
24 ounces cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
2 large apples, peeled and thinly sliced
1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup unsalted butter, cold and cubed
1/2 teaspoon ground cinnamon

Instructions

Preheat your oven to 350°F (175°C).
Combine graham cracker crumbs, 1/3 cup sugar, cinnamon, and melted butter; press into the bottom of a 9-inch springform pan and bake for 10 minutes.
Beat cream cheese and 3/4 cup sugar until smooth; beat in eggs one at a time, followed by vanilla extract.
Pour the cream cheese mixture over the cooled crust.
Arrange thin apple slices evenly over the cheesecake batter.
In a separate bowl, mix flour, oats, brown sugar, and cinnamon; cut in the cold butter until the mixture is crumbly.
Sprinkle the crumble mixture over the apple layer.
Bake for 50-60 minutes until set but slightly wobbly in the center.
Cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

Ensure all dairy ingredients are at room temperature to avoid lumps in the cheesecake batter. Do not overmix the batter once eggs are added to ensure a smooth, crack-free texture. Store the leftover cheesecake in an airtight container in the refrigerator for up to 3 days.
