Ingredients
2 cups all-purpose flour
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
2/3 cup cold butter, cubed
1 package (6-8 oz) thinly sliced apples (about 6–7 medium apples)
1/4 cup lemon juice
1/4 teaspoon ground nutmeg
1 cup old-fashioned oats
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons cold butter, cubed
Instructions
Preheat oven to 375°F (190°C)
Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal
In a large bowl, whisk flour, granulated and brown sugars, salt, and 1 teaspoon cinnamon. Add cold butter cubes and oats, tossing to coat. Use a pastry cutter or fingers to work in the butter until mixture resembles coarse crumbs. Press evenly into the prepared pan. Bake for 18-20 minutes until golden
Meanwhile, in another bowl, toss sliced apples with lemon juice, 1/4 teaspoon nutmeg, and 2 tablespoons brown sugar. Spread apple mixture over warm crust
For the streusel, combine oats, remaining 1/3 cup brown sugar, 1/2 teaspoon cinnamon, and 2 tablespoons cold butter. Mix until crumbly. Crumble streusel evenly over the apple layer
Return to oven and bake 20-25 minutes until golden and bubbly. Cool completely before cutting into bars
Notes
Use Granny Smith apples for tartness or Honeycrisp for sweetness
Chill crust for 15 minutes before baking if it becomes too warm while pressing
Wrap cooled bars in plastic wrap for up to 4 days
Best served with a scoop of vanilla bean ice cream
