Description

Experience the nostalgic comfort of a crisp autumn afternoon with these Apple Pie Cookies. These delightful treats bridge the gap between a classic handheld cookie and the sophisticated, warm flavors of a homemade pie. With a soft, brown sugar cookie base and a jammy, spiced McIntosh apple center, each cookie is a perfect miniature version of a rustic orchard dessert. Finished with a sweet drizzle, they are a meditative, heartwarming treat perfect for cozy gatherings or a quiet moment of reflection.

Ingredients

Scale

2 cups McIntosh apples, peeled and finely diced
1/4 cup light brown sugar, lightly packed
1 tablespoon lemon juice
2 teaspoons cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
2 tablespoons water
1 cup unsalted butter, softened
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Instructions

In a medium saucepan, combine diced apples, brown sugar, lemon juice, cinnamon, nutmeg, ginger, and water.
Cook over medium heat, stirring occasionally, until the apples soften.
Stir in the cornstarch and cook for another minute until the mixture thickens into a jammy consistency; set aside to cool.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
Beat in the egg and vanilla extract.
Gradually add the flour, baking soda, and salt, mixing until just combined.
Scoop rounded tablespoons of dough onto the prepared baking sheet.
Use your thumb to create a deep indentation in the center of each cookie.
Spoon a generous amount of the cooled apple mixture into the center of each indentation.
Bake for 12-14 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

The apple filling can be prepared up to three days in advance and stored in the refrigerator. Ensure the filling is completely cool before adding it to the cookie dough to prevent the cookies from spreading too much. Store leftover cookies in an airtight container at room temperature for up to 3 days.
