Ingredients
375g all-purpose flour
160g cold unsalted butter, cubed
125g vegetable shortening, chilled
100g ice-cold water
7.5g fine salt
15g brown sugar
1/3 cup brown sugar, packed
1/3 cup pure corn syrup
1/4 cup unsalted butter, melted and cooled
1 large egg, lightly beaten
1 tsp vanilla extract
Instructions
In a large bowl, whisk together the flour, salt, and 15g of brown sugar.
Cut in the cold butter and chilled shortening until the mixture resembles coarse crumbs.
Gradually add ice-cold water, mixing until the dough just comes together.
Wrap the dough and chill for at least 30 minutes before rolling out.
Preheat oven to 375°F (190°C).
Roll out the dough and cut into circles to fit a muffin tin.
In a separate bowl, whisk together the filling ingredients until smooth.
Spoon the filling into the pastry shells, being careful not to overfill.
Bake for 15-20 minutes until the pastry is golden and the filling is set but still slightly soft in the center.
Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Ensure all pastry ingredients are very cold to achieve maximum flakiness. Do not overwork the dough. For variety, you can add a few raisins or chopped pecans to each shell before pouring in the filling.
