Description

Experience the warmth of autumn with these tender, cake-like baked pumpkin donuts. Infused with aromatic spices like cinnamon and nutmeg, and topped with a luscious, salted maple glaze, these donuts offer a sophisticated yet simple way to embrace the cozy season. Baked to perfection without the need for deep-frying, they make for an indulgent, light, and delicious treat for any morning ritual or weekend gathering.

Ingredients

Scale

1 cup (125g) all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup pumpkin puree
1/3 cup packed brown sugar
1 large egg
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup powdered sugar
2 tablespoons pure maple syrup
1 tablespoon milk
1 pinch sea salt

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a separate large bowl, whisk the pumpkin puree, brown sugar, egg, vegetable oil, and vanilla until smooth.
Fold the dry ingredients into the wet ingredients until just combined.
Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
Bake for 10-12 minutes, or until the donuts spring back when lightly touched.
Allow the donuts to cool in the pan for 5 minutes before transferring to a wire rack.
In a small bowl, whisk together the powdered sugar, maple syrup, milk, and a pinch of salt until smooth.
Dip the top of each cooled donut into the glaze and let set before serving.

Notes

Ensure your pumpkin puree is 100% pure pumpkin, not pumpkin pie filling. To keep donuts fresh, store in an airtight container at room temperature for up to 3 days. For a crunchier topping, sprinkle a small amount of toasted chopped pecans over the wet glaze.
