Description

Blackberry Cheesecake Brownies combine rich fudgy brownies, creamy cheesecake, and sweet blackberry swirls for a decadent dessert with beautiful marbled layers.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh or frozen blackberries
  • 1 to 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch

Instructions

1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a small saucepan, combine the blackberries, sugar, and lemon juice over medium heat.

3. Simmer the blackberry mixture for 5 to 7 minutes, lightly mashing the berries until thick and jammy. Stir in cornstarch if needed, then cool completely.

4. In a mixing bowl, whisk together the melted butter and sugar until combined.

5. Add the eggs and vanilla extract and whisk until smooth.

6. Sift in the cocoa powder, flour, and salt, then stir until just combined.

7. Fold in the chocolate chips and spread the brownie batter evenly into the prepared pan.

8. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

9. Spread the cheesecake mixture evenly over the brownie batter.

10. Dollop the cooled blackberry mixture over the cheesecake layer.

11. Use a knife or skewer to gently swirl the blackberry mixture into the cheesecake layer.

12. Bake for 35 to 40 minutes until the center is just set with a slight jiggle.

13. Cool completely, then refrigerate for at least 1 hour before slicing and serving.


Notes

Use a warm knife wiped clean between cuts for neat brownie slices.

Store leftovers in an airtight container in the refrigerator for up to 1 week.

These brownies can also be frozen for longer storage.
