Description

A comforting and delightful dessert featuring a luscious blueberry filling topped with a crunchy, nutty almond and oat crumble. This crisp is easy to make, perfect for using fresh or frozen blueberries, and brings a taste of homemade goodness to any occasion. It’s a simple yet elegant treat that promises a warm embrace with every bite.

Ingredients

Scale

For the Filling:
4 cups fresh or frozen blueberries
1/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract

For the Topping:
1 cup all-purpose flour
1/2 cup rolled oats (not instant)
1/2 cup packed light brown sugar
1/2 cup slivered or sliced almonds
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into small cubes

Instructions

Preheat oven to 375°F (190°C).
In a large bowl, gently combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Pour the mixture into an 8×8 inch baking dish.
In a separate medium bowl, whisk together the flour, rolled oats, brown sugar, almonds, cinnamon, and salt.
Add the cold butter cubes to the dry ingredients. Using a pastry blender, your fingertips, or a fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Some larger pea-sized pieces of butter are okay.
Evenly sprinkle the topping mixture over the blueberry filling in the baking dish.
Bake for 35-45 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
Let the crisp cool for at least 10-15 minutes before serving to allow the filling to thicken.

Notes

Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
For a gluten-free version, substitute the all-purpose flour with a gluten-free all-purpose flour blend and ensure your oats are certified gluten-free.
Leftovers can be stored, covered, in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
