Description

These luxurious brioche cinnamon rolls combine an ultra-soft, buttery French-style yeast dough with a spiced apple filling. Enriched with fresh orange zest and high-quality butter, the dough provides a pillowy base for the caramelized, jam-like spiced apples. Perfect for a slow weekend morning or as a thoughtful gift, these golden, aromatic rolls offer a sophisticated yet comforting treat that brings the warmth of a sunlit kitchen to any home.

Ingredients

Scale

3 1/2 cups bread flour
1/4 cup granulated sugar
1 tsp salt
1 packet instant yeast
3 large eggs
1/2 cup warm whole milk
1 tsp orange zest
1 cup unsalted butter, softened at room temperature
2 large apples, peeled and finely diced
1/2 cup light brown sugar
2 tsp ground cinnamon
1/4 cup unsalted butter, melted for filling

Instructions

In a large bowl, whisk together flour, sugar, salt, and yeast.
Add eggs, milk, and orange zest to the dry mixture and knead until a soft dough forms.
Gradually incorporate the softened butter, kneading until smooth and elastic, then allow to rise until doubled in size.
While the dough rises, sauté the diced apples with brown sugar and a pinch of cinnamon until soft and jam-like, then cool.
Roll the dough out into a rectangle, spread with melted butter, and sprinkle with cinnamon and the prepared apples.
Roll tightly into a log and slice into 12 even pieces, placing them into a greased baking pan.
Allow the rolls to rise again in a warm spot for about 45 minutes.
Preheat oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.

Notes

Ensure all ingredients are at room temperature for the best dough consistency. You can prepare the dough the night before and let it do its first rise in the refrigerator to save time in the morning. Store any leftovers in an airtight container at room temperature for up to two days.
