Description

Experience the ultimate autumn comfort with these Brown Butter Pumpkin Oatmeal Latte Cookies. By blending the nutty richness of browned butter with the earthy sweetness of pumpkin and a robust kick of instant espresso, these cookies perfectly mimic a seasonal latte. They feature a chewy, dense oat-filled texture that provides a grounding, sophisticated treat. Ideal for cozy mornings or quiet evenings, these cookies are a simple yet impressive way to capture the soul of fall in every bite.

Ingredients

Scale

1 cup unsalted butter
1 1/4 cups brown sugar
2/3 cup pumpkin butter (divided)
1 large egg
1 tablespoon vanilla extract
3 tablespoons instant espresso powder
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 cups rolled oats

Instructions

Place butter in a saucepan over medium heat; cook, stirring constantly, until it turns amber and smells nutty. Remove from heat and let cool slightly.
In a large bowl, whisk the browned butter and brown sugar until smooth.
Add the egg, vanilla, and 1/3 cup of pumpkin butter, whisking until well combined.
Stir in the instant espresso powder until dissolved.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and ginger.
Gradually stir the dry ingredients into the wet mixture, then fold in the rolled oats.
Chill the dough for 30 minutes.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop rounded tablespoons of dough onto the sheet. Make a small indentation in each and add a small dollop of the remaining pumpkin butter.
Bake for 10-12 minutes until edges are set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure the browned butter has cooled slightly before adding the egg to prevent scrambling. For a stronger coffee flavor, increase the espresso powder to 4 tablespoons. Store in an airtight container at room temperature for up to 3 days.
