Ingredients
2 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup unsalted butter
1 cup water
1/2 cup sour cream
2 large eggs
3 medium apples, peeled, cored, and finely chopped
1 cup unsalted butter (for icing)
3/4 cup heavy cream (for icing)
2 cups packed brown sugar (for icing)
Instructions
Preheat oven to 350°F and grease a sheet pan.
In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
In a saucepan, bring butter and water to a boil, then pour over the dry ingredients and mix well.
Whisk in sour cream, eggs, and the chopped apples until combined.
Pour the batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
To make the icing, combine butter, cream, and brown sugar in a saucepan over medium heat.
Bring to a boil while stirring constantly, then remove from heat and let cool slightly.
Pour the warm caramel icing over the cake as soon as it comes out of the oven.
Notes
Ensure the apples are chopped finely so they soften properly while the cake bakes. You can serve this warm with a scoop of vanilla ice cream if desired. Store any leftovers in an airtight container at room temperature for up to 3 days.
