Description

Experience the comforting, soulful essence of traditional Southern pecan pie in a convenient, shareable format. These chewy bars feature a sturdy, buttery shortbread-like crust, a rich and gooey pecan-infused center, and a rustic, crumbly streusel topping, enhanced with a hint of creamy white chocolate. Perfect for gatherings or a quiet afternoon treat, these bars offer a luxurious textural balance without the fuss of rolling out traditional pie dough. Easy to bake, serve, and enjoy, they are designed to bring warmth and connection to your table.

Ingredients

Scale

2 cups all-purpose flour
1/2 cup granulated sugar
1 cup unsalted butter, cold and cubed
1/2 cup brown sugar, packed
1/2 cup light corn syrup
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups chopped pecans
1/2 cup quality white chocolate chips

Instructions

Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
In a large bowl, whisk together the flour and granulated sugar.
Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Press two-thirds of this mixture firmly into the bottom of the prepared pan and bake for 15 minutes.
While the crust bakes, whisk together the brown sugar, corn syrup, eggs, vanilla extract, and salt in a medium bowl until smooth.
Stir in the chopped pecans and white chocolate chips.
Pour the pecan mixture evenly over the pre-baked crust.
Sprinkle the remaining one-third of the crust mixture over the top.
Bake for another 20-25 minutes, or until the center is set and the top is golden brown.
Allow to cool completely in the pan before lifting and cutting into squares.

Notes

Ensure the butter is chilled for the crust to achieve the best texture. Store the cooled bars in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months. For an extra boost of flavor, you can lightly toast the pecans in a dry pan for 3-5 minutes before adding them to the batter.
