Ingredients
2 cups all-purpose flour
1 1/2 cups sugar, divided (1 cup granulated, 1/2 cup brown)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup butter, softened
1 cup chocolate chips
2 cups grated zucchini (squeezed to remove moisture)
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper.
In a medium bowl, whisk together flour, 1 cup sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, beat eggs, then add butter and mix until combined. Stir in zucchini and vanilla.
Gradually add dry ingredients to wet, mixing until fully incorporated. Fold in remaining 1/2 cup brown sugar and chocolate chips.
Pour batter into prepared pan. Bake for 55-60 minutes until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Use freshly grated zucchini for optimal texture and freshness.
Ensure excess zucchini liquid is squeezed completely to prevent a soggy crumb.
Store in an airtight container for up to 3 days at room temperature.
