These squares prove that humble kitchen staples can become a truly gourmet experience.
Ingredients
1/2 cup unsalted butter (1 stick)
10 ounces mini marshmallows
6 cups crispy rice cereal
1 cup high-quality semi-sweet chocolate chips
2/3 cup dried cranberries
1 pinch of sea salt
Instructions
Place the butter in a large pot and melt over low heat until completely smooth.
Add the marshmallows to the melted butter and stir constantly until the mixture is fully melted and silky.
Remove from heat and gently fold in the crispy rice cereal with a silicone spatula until evenly coated.
Fold in the dried cranberries and half of the chocolate chips, working quickly before the mixture sets.
Press the mixture firmly into a greased 9×13 inch pan using a piece of parchment paper to prevent sticking.
Top with the remaining chocolate chips while the mixture is still warm, pressing them lightly into the top.
Allow the squares to set at room temperature for at least 30 minutes before slicing into bars.
Notes
Ensure you use a large pot for melting the marshmallows to have enough room to fold in the cereal comfortably. To keep these treats fresh, store them in an airtight container at room temperature for up to three days. For a firmer hold, lighty grease your hands or the spatula with butter before pressing the mixture into the pan.
