Description

A rich and fudgy quick bread blending grated zucchini with cocoa powder and dark chocolate, featuring soft whole-wheat pastry flour and Greek yogurt for a moist, nutritious loaf that satisfies chocolate cravings with hidden veggies.


Ingredients

1 1/2 cups whole-wheat pastry flour
1/2 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
2 large eggs
1 cup Greek yogurt
1/2 cup vegetable oil
1 teaspoon baking soda
1/2 teaspoon salt
2 cups grated zucchini
1/4 cup dark chocolate chips


Instructions

Preheat oven to 350°F (175°C)
Line a 9×5-inch loaf pan with parchment paper
Grate zucchini and set aside
In a large bowl, whisk flours, cocoa powder, baking soda, salt, and sugar
Mix in eggs, Greek yogurt, and oil until smooth
Fold in grated zucchini and chocolate chips
Pour batter into prepared pan
