Ingredients
6 large hard-boiled eggs, peeled and chopped
1 ripe avocado, peeled and pitted
Juice of 1 lime
1 small red onion, finely chopped
1 tbsp fresh cilantro, chopped
1 tsp ground cumin
Salt and pepper to taste
Instructions
In a medium bowl, gently mash the avocado with a fork
Add chopped eggs and mix until combined
Stir in lime juice, red onion, cilantro, cumin, salt, and pepper
Mix until well integrated but not overworked
Cover and chill for 15 minutes before serving
Notes
For extra texture, add chopped cherry tomatoes or diced cucumber
Store in an airtight container in the fridge for up to 2 days
