Description
These modern twist brownies combine gooey chocolate with tangy strawberry notes. Made with a shortcut strawberry cake mix and a glossy strawberry glaze, these brownies deliver a fruity yet fudgy delight in 30 minutes.
Ingredients
1 box strawberry cake mix (plus water and oil as per package instructions)
1/2 cup semi-sweet chocolate chips
1/4 cup strawberry preserves
1/4 cup finely chopped fresh strawberries (optional)
1/4 cup unsalted butter, melted
1/2 cup brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Prepared glaze made from melted strawberry preserves and a splash of lemon juice
Instructions
Preheat oven to 350°F (180°C)
In a large bowl, combine the dry ingredients from the strawberry cake mix per the package instructions (adding only the required water and oil)
Mix in the melted butter, brown sugar, vanilla extract, and salt until well combined
Fold in the chocolate chips and chopped strawberries (if using)
Pour the batter into a prepared 8×8-inch baking pan and spread evenly
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs
Let the brownies cool completely
While the brownies cool, prepare the glaze by stirring together the strawberry preserves and a splash of lemon juice until smooth
Drizzle the glaze over the cooled brownies and let it set slightly before slicing
Notes
For a richer flavor, use dark chocolate chips.
Can be stored in an airtight container at room temperature for up to 3 days or in the fridge for 1 week.
Substitute the strawberry preserves with a homemade berry compote if preferred.
