Description

This rustic, moist apple cake combines the warmth of cinnamon with the texture of fresh apple chunks and silky applesauce. Topped with a sophisticated, buttery salted caramel frosting, it is the perfect comfort dessert that bridges the gap between a cozy breakfast treat and an elegant afternoon snack. Simple to prepare, this single-layer cake offers professional results with minimal effort, making it an ideal choice for any baker looking to bring a touch of home-baked charm to their table.

Ingredients

Scale

2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup light brown sugar
1/2 cup unsalted butter, softened
1/2 cup unsweetened applesauce
1 cup fresh apples, peeled and chopped
1/2 cup butter (for frosting)
1/2 cup brown sugar (for frosting)
1/4 cup heavy cream (for frosting)
1 1/2 cups powdered sugar (for frosting)
1/2 teaspoon sea salt (for frosting)

Instructions

Preheat your oven to 350°F and grease a 9-inch square baking pan.
Whisk together flour, baking powder, baking soda, cinnamon, and salt in a bowl.
In a separate bowl, cream together the softened butter and light brown sugar until smooth.
Add the eggs one at a time, followed by the applesauce, mixing until well combined.
Gradually stir the dry ingredients into the wet until just incorporated.
Fold in the fresh chopped apples by hand.
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
Allow the cake to cool completely on a wire rack.
To make the frosting, melt butter and brown sugar in a saucepan over medium heat until bubbly.
Whisk in the heavy cream and cook for 2 minutes, then remove from heat and cool slightly.
Gradually whisk in the powdered sugar and sea salt until smooth and spreadable.
Spread the frosting evenly over the cooled cake before serving.

Notes

Store the cake in an airtight container at room temperature for up to 3 days. For a deeper flavor, you can toast the apples slightly in a pan before folding them into the batter. Use a tart apple variety like Granny Smith for the best contrast against the sweet caramel frosting.
