Description

These apple oatmeal bars are a wholesome, comforting treat that perfectly blends the chewiness of rolled oats with the gentle sweetness of fresh apples. Naturally sweetened and packed with fiber, these portable bars serve as an excellent grab-and-go breakfast or a cozy, mindful snack. Reminiscent of a rustic fruit crumble, they offer a perfect balance of texture and warmth for a healthy lifestyle.

Ingredients

Scale

2 cups old-fashioned rolled oats
1 1/2 cups flour
1/2 cup honey
1/2 cup unsweetened applesauce
1/3 cup melted coconut oil
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 medium apples, thinly sliced
1/4 cup chopped pecans

Instructions

Preheat your oven to 350°F (175°C) and grease an 8×8 baking pan.
In a large bowl, whisk together the honey, applesauce, melted coconut oil, and cinnamon.
Stir in the oats, flour, baking soda, and salt until well combined to form a thick dough.
Press two-thirds of the oat mixture into the bottom of the prepared pan to create a firm base.
Layer the thinly sliced apples evenly over the base.
Crumble the remaining oat mixture over the apples and sprinkle with chopped pecans.
Bake for 30-35 minutes until the top is golden brown and the apples are tender.
Allow to cool completely in the pan before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. You can substitute butter for coconut oil if preferred.
