A vibrant stir-fry combining lean beef, colorful vegetables, and a rich savory-sweet sauce, served over wholesome grains. Quick, healthy, and bursting with bold flavor.
Ingredients
1.5 lb lean beef (sirloin or tenderloin), thinly sliced
1 red bell pepper, sliced
1 broccoli crown, florets
1 cup carrot slices
1 cup snap peas
3 garlic cloves, minced
1 tbsp grated fresh ginger
2 tbsp soy sauce (low sodium)
1 tbsp rice vinegar
1 tbsp honey
1 tsp sesame oil
1 tbsp cornstarch (for sauce thickening)
2 tbsp olive oil
1 small onion, sliced
Rice or noodles (optional grain base)
1 tbsp toasted sesame seeds (optional garnish)
2 green onions, sliced (optional garnish)
Instructions
Heat a wok or large skillet over medium-high heat
Add 1 tbsp olive oil, sauté onion until fragrant
Add beef slices and cook until browned (2-3 mins)
Push beef aside, add garlic, ginger, and stir fry for 30 seconds
Add bell pepper, broccoli, carrots, and snap peas
Pour in soy sauce, vinegar, ginger liquid, and bring to simmer
Mix cornstarch with 2 tbsp water and stir into sauce to thicken
Cook until sauce coats ingredients (5-7 mins)
Serve over rice/quinoa/noodles
Garnish with sesame seeds and green onions
Notes
Use any seasonal vegetables
Substitute soy sauce with tamari for gluten-free
Omit cornstarch for homemade sauce alternatives
Store leftovers in air-tight containers for 3-4 days
