Ingredients
4 fresh peaches, sliced thinly
1/4 cup light brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons cornstarch
1 sheet puff pastry, thawed
1 large egg, beaten
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, gently toss the sliced peaches with brown sugar, ground cinnamon, and cornstarch until well coated.
Roll out the thawed puff pastry on a parchment-lined baking sheet.
Arrange the peach slices in the center of the dough, leaving a 2-inch border around the edges.
Fold the edges of the pastry up and over the outer edge of the peaches, pleating as needed.
Brush the folded edges of the pastry with the beaten egg for a golden finish.
Bake for 25-30 minutes or until the pastry is puffed and golden brown and the fruit is tender.
Allow to cool slightly before serving.
Notes
Ensure the puff pastry is kept cold until the moment it enters the oven for the best rise. You can serve this warm with a scoop of vanilla ice cream or non-dairy whipped topping.
