Description

These baked Pumpkin Spice Donuts are the perfect autumn treat, offering a tender, cake-like crumb infused with warm notes of cinnamon, ginger, and clove. Topped with a sophisticated brown butter and maple glaze, these donuts offer a nutty, velvety finish that elevates the humble pumpkin base. Perfect for a cozy brunch, this recipe requires no frying and simple preparation, making it a soulful, aromatic experience for any baker.

Ingredients

Scale

11 tablespoons unsalted butter, cubed
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon pumpkin pie spice
3/4 cup pure pumpkin purée
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup buttermilk
1 large egg
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons pure maple syrup

Instructions

Preheat oven to 350°F (175°C) and lightly grease a donut pan.
In a small saucepan over medium heat, melt 3 tablespoons of the butter until it turns golden brown and smells nutty, then set aside to cool.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
In a separate bowl, whisk together the pumpkin purée, granulated sugar, brown sugar, buttermilk, egg, vanilla, and the cooled browned butter.
Fold the wet ingredients into the dry ingredients until just combined.
Pipe the batter into the donut pan and bake for 10-12 minutes until the donuts spring back when touched.
For the glaze, brown the remaining 8 tablespoons of butter in a saucepan until deep amber, then whisk in the powdered sugar and maple syrup until smooth.
Dip the cooled donuts into the glaze and serve.

Notes

Ensure all ingredients are at room temperature for the best emulsion. Store in an airtight container at room temperature for up to 3 days. The brown butter can burn quickly, so keep a close eye on it during the heating process.
