Ingredients
2 (21-ounce) cans sliced peaches, drained
3/4 cup granulated sugar
2 tablespoons lemon juice
3/4 teaspoon ground cinnamon
3/4 cup all-purpose flour
1/2 cup light brown sugar, packed
1/4 teaspoon salt
1 tablespoon baking powder
3/4 cup unsalted butter, melted
1 teaspoon vanilla extract (alcohol-free)
Zest of 1 lemon
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a large bowl, mix peaches, 3/4 cup sugar, lemon juice, and cinnamon. Spread evenly in the baking dish.
In a separate bowl, combine flour, brown sugar, salt, and baking powder. Mix in melted butter until crumbly. Fold in vanilla extract and lemon zest.
Sprinkle the topping evenly over the peaches. Bake for 35-40 minutes, or until golden and bubbly.
Let cool slightly before serving.
Notes
Use fresh peaches if in season—mash gently and reduce additional sugar to 1/3 cup.
Sprinkle extra brown sugar or cinnamon on top for crisper crust.
Store in an airtight container at room temperature for 2 days or refrigerate for 5 days.
