Description

Experience the ultimate autumn comfort with these chewy oatmeal pumpkin cookies. Crafted with wholesome pumpkin puree, hearty rolled oats, and warm aromatic spices like cinnamon and nutmeg, these cookies offer a nostalgic and nourishing treat. Designed to be a balanced indulgence rather than overly sugary, they feature pockets of mini chocolate chips that make every bite a delightful moment of peace and warmth. Perfect for beginners, this single-bowl recipe transforms simple pantry staples into a restorative, soul-soothing experience that fills your home with the fragrance of the season.

Ingredients

Scale

1/2 cup pumpkin puree (pure, not pie filling)
1 large egg, room temperature
1/3 cup avocado oil
1/2 cup light brown sugar, packed
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1 1/2 cups rolled oats
1 cup all-purpose flour
1/3 cup mini chocolate chips

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the pumpkin puree, egg, avocado oil, brown sugar, and vanilla extract until smooth.
Add the baking soda, baking powder, salt, cinnamon, and nutmeg to the wet mixture and stir well.
Fold in the rolled oats and flour until just combined, being careful not to overmix.
Fold in the mini chocolate chips.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12 to 14 minutes or until the edges are set and the cookies feel soft yet set in the center.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure you use pure pumpkin puree and not canned pumpkin pie filling to control the sugar and spice levels. For a richer flavor, you may substitute the avocado oil with an equal amount of melted unsalted butter. Store in an airtight container at room temperature for up to 3 days or freeze for up to 1 month.
