1 cup fresh blueberries
1/3 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon cornstarch
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, mix flour and 1/4 cup sugar; cut in cold butter until the mixture resembles coarse crumbs.
Stir in egg yolk and ice water until the dough forms a ball, then press into a 9-inch tart pan.
In a separate bowl, toss the sliced peaches and blueberries with 1/3 cup sugar, lemon juice, lemon zest, and cornstarch.
Arrange the fruit mixture evenly over the prepared tart shell.
Bake for 35 to 40 minutes, or until the fruit is bubbling and the crust is golden brown.
Cool slightly on a wire rack before serving to allow the juices to set.
