Ingredients
5 cups apples, sliced (Granny Smith or Honeycrisp)
1/2 cup coconut sugar
1 tablespoon coconut flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons coconut oil, melted
1 1/2 cups granola of choice
1/4 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, toss the sliced apples with coconut sugar, coconut flour, cinnamon, and nutmeg until well coated.
Transfer the apple mixture to a baking dish.
Drizzle the melted coconut oil over the apples.
Spread the granola evenly over the top of the apple mixture.
Bake for 30 to 35 minutes, or until the apples are tender and the granola topping is golden and fragrant.
Remove from the oven and let cool slightly before serving.
Notes
Serve warm, perhaps with a dollop of Greek yogurt or a drizzle of almond butter for extra protein. To store, cover and keep at room temperature for up to two days, or refrigerate for up to four days. Reheat in the oven or microwave to restore the crispness of the granola.
