Ingredients
2 cups ripe Bosc or Bartlett pears, peeled, cored, and diced
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1 cup brown sugar, packed
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
In a bowl, toss the diced pears with granulated sugar, lemon juice, cinnamon, and vanilla extract; set aside to macerate.
In a separate large bowl, whisk together the oats, flour, brown sugar, baking powder, and salt.
Pour the melted butter into the dry mixture and stir until crumbly.
Press two-thirds of the oat mixture firmly into the bottom of the prepared pan.
Spread the pear mixture evenly over the base.
Sprinkle the remaining oat mixture over the top of the pears.
Bake for 35 to 40 minutes, or until the top is golden brown and the fruit is bubbling.
Allow the bars to cool completely in the pan before cutting into squares.
Notes
Store the bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. You can reheat individual bars in a microwave for 15 seconds for a warm, comforting treat. For added crunch, stir 1/4 cup of chopped walnuts into the crumble topping.
