Description
This rustic French-inspired galette features a buttery, flaky crust spread with a rich almond cream and topped with thinly sliced Honeycrisp apples. The almond cream acts as a delicious barrier, keeping the crust crisp while adding a nutty depth that perfectly complements the tart, spiced apples. It is a forgiving, elegant dessert that celebrates seasonal flavors, perfect for any occasion from cozy brunches to refined dinners.
Ingredients
1 1/4 cups all-purpose flour
1/2 tsp salt
1 tbsp granulated sugar
8 tbsp cold unsalted butter, cubed
3–4 tbsp ice water
1/2 cup almond flour
1/4 cup granulated sugar
2 tbsp softened unsalted butter
1 large egg
1/2 tsp vanilla extract
2 large Honeycrisp apples, thinly sliced
1 tbsp brown sugar
1/2 tsp ground cinnamon
Instructions
In a large bowl, whisk together flour, salt, and 1 tbsp sugar.
Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until the dough just comes together, then chill for 30 minutes.
For the almond cream, beat the almond flour, 1/4 cup sugar, softened butter, egg, and vanilla until smooth.
Roll the chilled dough into a rough 10-12 inch circle on parchment paper.
Spread the almond cream over the center of the dough, leaving a 2-inch border.
Arrange the apple slices over the almond cream in an overlapping pattern.
Fold the edges of the dough over the apples, pleating as you go.
Sprinkle the apples with brown sugar and cinnamon.
Bake at 375°F (190°C) for 35-40 minutes until the crust is golden brown.
Notes
Keep the butter very cold for a flakier crust. You can brush the crust edges with an egg wash before baking for a glossy finish. Serve warm, optionally with a dollop of whipped cream.
