Description

A tender, spiced loaf bursting with fresh peaches and Southern charm. Combines ripe diced peaches, warm cinnamon, and vanilla for a handheld comfort perfect with coffee or tea. Golden on the outside, softly crumbed within.


Ingredients

2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 1/2 cups granulated sugar
1 tsp salt
2 tsp ground cinnamon
1 cup (2 sticks) unsalted butter, softened
2 large eggs, room temperature
1 cup whole milk
2 tbsp pure vanilla extract
4 cups diced fresh peaches (about 4 medium)
1/2 cup chopped pecans (optional)


Instructions

Preheat oven to 350°F (175°C)
Grease and flour an 8×4-inch loaf pan
In a large bowl, whisk flour, baking powder, baking soda, sugar, salt, and cinnamon
In another bowl, cream butter until smooth
Beat in eggs one at a time, then stir in milk and vanilla
Gradually mix wet ingredients into dry ingredients until just combined
Fold in half of the peaches and pecans
Pour batter into prepared pan and top with remaining peaches and pecans
Bake 50-60 minutes until golden and a toothpick comes out clean
Cool in pan 10 minutes, then transfer to a wire rack


Notes

Use perfectly ripe but firm peaches for best texture
For canned peaches: drain well and pat dry to prevent sogginess
Store in an airtight container up to 3 days
Freeze slices in a single layer for longer storage
For vegan version: substitute butter with coconut oil and use flax eggs
