Description

These cookies offer a sophisticated, chewy, and tender experience, elevating the classic chocolate chip cookie with the rich, woody depth of pure dark maple syrup and the toasted, earthy crunch of pecans. By incorporating brown butter, we unlock deep toffee notes that harmonize perfectly with 70% cacao bittersweet chocolate. Perfect for sharing, this recipe bridges the gap between classic comfort and rustic elegance, ensuring every bite is a warm, nostalgic embrace.

Ingredients

Scale

14 tablespoons unsalted butter (6 tbsp for browning, 8 tbsp softened)
0.5 cup pure dark robust maple syrup
0.5 cup granulated sugar
1 large egg yolk, room temperature
2 teaspoons pure vanilla extract
2 cups all-purpose flour
0.5 teaspoon baking soda
0.5 teaspoon salt
1 cup chopped toasted pecans
1 cup bittersweet chocolate chunks (60-70% cacao)

Instructions

In a small saucepan over medium heat, melt 6 tablespoons of butter, stirring constantly until it foams and turns deep golden brown. Remove from heat immediately and cool slightly.
In a large bowl, cream together the softened 8 tablespoons of butter, granulated sugar, and browned butter until smooth.
Add the maple syrup, egg yolk, and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the pecans and chocolate chunks.
Cover and refrigerate the dough for at least 30 minutes to allow flavors to meld.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop rounded tablespoons of dough onto the sheet and bake for 10-12 minutes until edges are crisp and centers are set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Using a dark robust grade of maple syrup is essential for that deep, woody flavor profile. The dough can be kept in the refrigerator for up to 48 hours for a more complex, developed taste. Ensure your egg yolk is at room temperature for the best emulsion with the fats.
