They are an elegant, hassle-free way to serve a classic favorite at holiday gatherings, ensuring every guest enjoys a perfectly caramelized, restaurant-quality dessert that feels like a gentle hug on a plate.

Ingredients

Scale

2 2/3 cups all-purpose flour
2 2/3 tablespoons granulated sugar
1 1/3 teaspoons salt
1 3/16 cups unsalted butter, cold
1/2 cup ice water
4 cups chopped apples, peeled and cored
1/2 cup granulated sugar
1 tablespoon apple pie spice
1 1/2 tablespoons cornstarch
2 tablespoons unsalted butter, cubed
Heavy cream for brushing
Coarse sugar for sprinkling

Instructions

In a large bowl, whisk together flour, 2 2/3 tbsp sugar, and salt.
Cut the cold butter into the flour mixture until it resembles coarse crumbs.
Gradually stir in ice water until the dough forms a ball, then chill for 30 minutes.
For the filling, toss chopped apples with 1/2 cup sugar, apple pie spice, and cornstarch.
Roll out the dough and cut circles to fit into a muffin tin or small pie molds.
Fill each crust with the apple mixture and top with a small cube of butter.
Add decorative lattice strips over each pie.
Brush the tops with heavy cream and sprinkle with coarse sugar.
Bake at 375 degrees Fahrenheit until the pastry is golden brown and the filling is bubbling.
Cool slightly before serving.

Notes

Keep the butter very cold to ensure the crust remains flaky. You can assemble these ahead of time and refrigerate before baking. Serve warm for best results.
