Ingredients
2 cups mini Nilla wafer crumbs
8 tablespoons unsalted butter, melted
1/8 teaspoon salt
1 box (3.4 oz) instant banana cream pudding mix
1 1/4 cups cold whole milk
1 large banana, sliced into rounds
24 whole mini Nilla wafers for topping
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
In a bowl, combine the wafer crumbs, melted butter, and salt until the mixture resembles wet sand.
Press about a tablespoon of the crumb mixture into each mini muffin cup, forming a small crust.
Bake for 5-7 minutes until set, then let them cool completely in the pan.
Whisk the instant pudding mix with the cold milk in a medium bowl for 2 minutes until thickened.
Pipe or spoon the banana cream pudding into each cooled crust.
Top each bite with a fresh banana slice and a whole mini Nilla wafer.
Refrigerate for at least 30 minutes before serving to ensure the pudding sets perfectly.
Notes
To prevent banana slices from browning, toss them in a little lemon juice before topping the bites. You can store these in an airtight container in the refrigerator for up to 24 hours. For added texture, you can garnish with a dollop of whipped cream just before serving.
