Description

These no-bake energy bites combine rolled oats, plant-based protein, and tart dried blueberries for a sweet, chewy snack. Made without eggs, flour, or refined sugar, they’re a quick, portable way to stay fueled and healthy.

Ingredients

Scale

1 cup rolled oats (old-fashioned or quick)
½ cup vanilla plant-based protein powder
½ cup almond butter (or sunflower seed butter)
1/3 cup pure maple syrup
½ cup dried blueberries
1 tbsp chia seeds
½ tsp baking powder
1 tsp vanilla extract
1/4 tsp sea salt

Instructions

Combine rolled oats, protein powder, chia seeds, baking powder, and salt in a large bowl.
Add almond butter and maple syrup, mixing until fully incorporated.
Fold in dried blueberries, then stir in vanilla extract.
Using a tablespoon, roll the mixture into 1-inch balls and place on a baking sheet.
Cover and refrigerate for 1 hour before serving.
Store in an airtight container in the fridge for up to 7 days.

Notes

For a nut-free version, use sunflower seed butter.
Adjust sweetness by adding more maple syrup or using a sugar-free alternative.
Protein powder can be substituted with Greek yogurt or silken tofu for a non-powdered option.
