Description
No-Bake Peach Cheesecake Bars are a creamy and indulgent dessert layered with a buttery biscuit crust, luscious cheesecake filling, caramelized peaches, crunchy streusel, and whipped cream.
Ingredients
- 400 g digestive biscuits
- 150 g unsalted butter, melted
- 460 g cream cheese, room temperature
- 75 g granulated sugar
- 1 teaspoon vanilla extract
- 245 ml whipped cream
- 5 peaches, sliced
- 1/3 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons lemon juice
- 3 teaspoons water
- 3 teaspoons cornstarch
- 1/4 cup all-purpose flour
- 2 1/3 teaspoons brown sugar
- 1 1/4 teaspoons sugar
- Pinch of salt
- 1 tablespoon unsalted butter, melted and cooled
- Whipped cream for topping
- Caramel sauce for serving
Instructions
1. Blitz the digestive biscuits in a food processor until fine crumbs form.
2. Mix the biscuit crumbs with melted butter until fully combined.
3. Press the crumb mixture firmly into the bottom of an 8-inch springform pan and refrigerate for 30 minutes.
4. To make the peach topping, combine sliced peaches, brown sugar, cinnamon, nutmeg, lemon juice, water, and cornstarch in a saucepan.
5. Cook the peach mixture over medium-high heat for 8 to 12 minutes until caramelized and thickened, then allow to cool.
6. For the streusel, melt the butter in a small saucepan over low heat.
7. Stir in the flour, brown sugar, sugar, and salt until crumbly, then remove from heat and cool.
8. Whisk the whipped cream until stiff peaks form.
9. Add the cream cheese, granulated sugar, and vanilla extract to the whipped cream and gently fold or whisk until smooth and combined.
10. Remove the chilled crust from the refrigerator and spread the cheesecake filling evenly over the crust.
11. Top with the cooled caramelized peaches and gently spread into an even layer.
12. Sprinkle the streusel evenly over the peaches.
13. Cover with plastic wrap and refrigerate for at least 6 hours or until fully set.
14. Slice into bars and top with whipped cream and caramel sauce before serving.
Notes
Use full-fat cream cheese and whipped cream for the best texture and stability.
Allow all filling ingredients to come to room temperature before mixing for a smoother filling.
Avoid overmixing the cheesecake filling to keep it light and creamy.
Graham crackers or golden sandwich cookies can be substituted for digestive biscuits in the crust.
