Description

Indulge in the cozy essence of autumn with these elegant, no-bake pumpkin cheesecake balls. Combining the rich, tangy creaminess of cheesecake with the warm, earthy sweetness of pumpkin and a satisfying crunch of gingersnap cookies, these truffles are a perfect make-ahead treat. Coated in a smooth white almond bark shell, they offer a sophisticated, bite-sized experience that captures the nostalgia of pumpkin pie without the need for an oven. Ideal for seasonal gatherings or a quiet moment of comfort.

Ingredients

Scale

8 ounces cream cheese, softened
1/2 cup pumpkin purée
2 tablespoons maple syrup
1 teaspoon pumpkin pie spice
1 1/2 cups crushed gingersnap cookies
12 ounces white almond bark or high-quality white chocolate melting wafers

Instructions

In a large bowl, beat the softened cream cheese, pumpkin purée, maple syrup, and pumpkin pie spice until smooth and well combined.
Fold in the crushed gingersnap cookies until a dough-like consistency is achieved.
Cover the bowl and refrigerate for at least 1 hour to firm up the mixture.
Scoop the mixture into small, bite-sized balls using a tablespoon or cookie scoop and place them on a parchment-lined tray.
Place the tray back in the refrigerator or freezer for 15 minutes.
In a microwave-safe bowl, melt the white almond bark according to package directions, stirring until smooth.
Dip each chilled ball into the melted coating, shaking off any excess, and return to the parchment paper to set.
Once the coating has hardened, store the balls in the refrigerator until ready to serve.

Notes

Keep the cheesecake balls refrigerated as the center remains soft and fudge-like. They can be stored in an airtight container for up to 5 days. For extra texture, you can sprinkle a tiny pinch of extra gingersnap crumbs on top of the coating before it sets.
