Ingredients
12 large fresh strawberries
8 oz cream cheese, softened
1/2 cup whipped cream
1/4 cup granulated sugar
1/2 cup pureed strawberries
1 tsp gelatin (vegetarian-friendly)
1 tbsp lemon juice
Instructions
1. Wash strawberries. With a small spoon, gently hollow each strawberry, leaving 1/4-inch on the sides and base.
2. In a bowl, beat cream cheese until smooth. Gradually add whipped cream and sugar, blending until homogeneous.
3. Mix in pureed strawberries and lemon juice for tartness.
4. Fold in gelatin (loosely mixed with 1 tsp water, microwaved 5 seconds until melted).
5. Spoon mixture into prepared strawberries. Chill for 1 hour before serving.
Notes
Use a melon baller to maintain strawberry shape.
For sturdier fillings, chill gelatin-sugar mixture in fridge until slightly firm.
Store in airtight container in fridge up to 3 days.
