Description
These Paleo Pecan Pie Bars are a grain-free, refined sugar-free reinvention of the classic Southern dessert. Using a base of almond flour and a topping of caramelized pecans, maple syrup, and honey, these bars offer a deeply nourishing alternative. They are perfectly crunchy, gooey, and ideal for autumn gatherings or as a healthy, wholesome treat to pair with your morning coffee.
Ingredients
2 1/2 cups almond flour
1/3 cup coconut oil, melted
1/4 cup coconut sugar
1/4 teaspoon sea salt
2 cups raw pecans, chopped
1/2 cup pure maple syrup
1/3 cup raw honey
3 tablespoons grass-fed butter
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
Mix the almond flour, melted coconut oil, coconut sugar, and salt in a bowl until a dough forms.
Press the crust mixture evenly into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden.
While the crust bakes, combine the pecans, maple syrup, honey, butter, and vanilla in a saucepan over medium heat.
Simmer the pecan mixture for 5 minutes, then pour it evenly over the pre-baked crust.
Return the pan to the oven and bake for another 20 minutes until the center is bubbling.
Allow the bars to cool completely in the pan for at least 2 hours before slicing into squares.
Notes
Ensure you let the bars cool completely before cutting to allow the gooey filling to set properly. Store in the refrigerator for up to one week or freeze for longer preservation.
