Ingredients
1 lb peaches (peeled and sliced)
1 cup sugar
1/4 cup all-purpose flour
1 tbsp lemon juice
1 tsp ground cinnamon
1 cup self-rising flour
1/4 tsp salt
1/2 cup unsalted butter, cubed
1 tbsp milk (non-dairy optional)
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine peeled peaches, 1 cup sugar, 1/4 cup flour, lemon juice, and cinnamon
Pour filling into an 8×8-inch baking dish
In a separate bowl, mix 1 cup self-rising flour and 1/4 tsp salt
Cut in cubed butter until crumbly
Sprinkle 1 tbsp sugar over the butter mixture
Gradually stir in milk until dough forms a thick batter
Spread dough over peaches evenly
Bake for 40-45 minutes until golden
Notes
Use fresh peaches in summer or canned (drained) when out of season
Serve warm with vanilla ice cream
Store leftovers covered at room temperature for up to 2 days
