Description

Soft, buttery cookies filled with spiced peaches and a crumble topping, crowned with a smooth vanilla glaze for a portable cobbler-inspired treat.


Ingredients

1 cup (2 sticks) softened unsalted butter
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 tablespoon non-alcoholic vanilla extract
1 1/2 cups peeled, diced fresh peaches
Crumb topping: 1/2 cup all-purpose flour, 1/4 cup brown sugar, 2 tablespoons melted unsalted butter, 1/2 teaspoon ground cinnamon
Vanilla glaze: 1 cup powdered sugar, 2-3 tablespoons milk, 1 teaspoon non-alcoholic vanilla extract


Instructions

Preheat oven to 350°F (175°C)
Line baking sheets with parchment paper
In a bowl, mix flour, baking powder, salt, and cinnamon
In another bowl, cream butter, granulated sugar, brown sugar, and vanilla extract
Beat in eggs until smooth
Gradually add dry ingredients, mixing until fully combined
Fold in diced peaches
Portion into 24 dough balls, spacing 2 inches apart
Flatten each cookie and press additional peaches into the dough
Bake for 10-12 minutes until edges are golden
Let cool slightly
Meanwhile, mix crumb topping ingredients and scatter over warm cookies
Allow cookies to cool completely
For glaze, whisk powdered sugar, milk, and vanilla until smooth
Drizzle over cooled cookies


Notes

Use ripe peaches with firm flesh
Substitute 1/2 cup dairy-free spread for a halal/vegetarian option
Store in an airtight container at room temperature up to 2 days
Glaze can be refrigerated overnight for stronger flavor
