Description

Savory and sweet peach crumb bars with a buttery oat crust, spiced peach filling, and golden crumble topping. These handheld treats combine the charm of classic desserts with summer’s freshest fruit in a no-fuss format perfect for gatherings.

Ingredients

Scale

1 1/2 cups all-purpose flour (crust)
3/4 cup old-fashioned rolled oats (crust)
1/2 cup granulated sugar (crust)
1/2 cup unsalted butter, softened (crust)
1/2 teaspoon ground cinnamon (crust)
1/4 teaspoon salt (crust)
2 cups fresh peeled peach slices (filling)
1/4 cup granulated sugar (filling)
1 teaspoon lemon juice (filling)
1/2 teaspoon ground cinnamon (filling)
2 tablespoons all-purpose flour (filling)
1 cup all-purpose flour (crumb topping)
3/4 cup packed brown sugar (crumb topping)
1/2 cup unsalted butter, cold (crumb topping)
1/2 cup chopped walnuts (optional, crumb topping)
Vanilla extract (icing drizzle)
1 1/2 cups confectioners’ sugar (icing drizzle)
2 tablespoons unsalted butter (icing drizzle)
2–3 tablespoons milk (icing drizzle)

Instructions

Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
Combine crust ingredients in a food processor and pulse until crumbly. Press mixture firmly into the prepared pan and bake for 8-10 minutes.
While crust bakes, toss peaches with sugar, lemon juice, cinnamon, and 2 tablespoons flour. Spread over warm crust.
For crumb topping: In a bowl, mix flour, brown sugar, cinnamon, and walnuts. Cut in cold butter until crumbs are evenly textured. Sprinkle over peach layer.
Return pan to oven and bake for 20-25 minutes, until topping is golden and fruit is bubbly.
Let cool completely. Prepare icing by blending confectioners’ sugar, butter, milk, and 1/2 teaspoon vanilla. Spread over bars before slicing into squares.

Notes

Use frozen peaches with juice, thawed and drained, if fresh aren’t available.
Store in an airtight container at room temperature for up to 2 days or refrigerate for 5 days.
Perfect for summer picnics or potlucks—no utensils required.
