It is a comforting, timeless dessert that is simple to prepare yet deeply satisfying, making it an excellent choice for a quiet afternoon treat or an elegant finish to a family gathering.
Ingredients
200 grams dark cooking chocolate, finely chopped
120 grams unsalted butter
2 pears, cored and thinly sliced
3 large eggs, room temperature
100 grams brown sugar
200 grams all-purpose flour
1 1/2 teaspoons baking powder
1 pinch fine sea salt
50 grams chocolate chunks (optional)
Instructions
Preheat your oven to 180°C (350°F) and grease a cake tin.
In a heatproof bowl, melt the chopped dark chocolate and butter together until smooth; set aside to cool slightly.
In a separate large bowl, whisk the eggs and brown sugar until light and airy.
Slowly fold the cooled melted chocolate mixture into the egg mixture.
Sift in the flour, baking powder, and salt, folding gently until just combined.
Pour the batter into the prepared cake tin.
Arrange the thin pear slices in a circular pattern on top of the batter.
Sprinkle with additional chocolate chunks if desired.
Bake for 35-40 minutes, or until a skewer inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Ensure pears are slightly firm to prevent them from becoming too mushy during the baking process. Serve slightly warm to accentuate the chocolate notes. Store in an airtight container at room temperature for up to 3 days.
