Ingredients
3/4 cup gluten-free quick-cooking oats
1/2 cup gluten-free finely ground oat flour
1/3 cup softened vegan butter
1/3 cup firmly packed coconut sugar
1/3 cup finely chopped pecans
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3 medium pears, peeled, cored, and coarsely chopped
1/4 cup coconut sugar
2 tablespoons tap water
8 ounces softened cream cheese
1/4 cup coconut sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
In a bowl, mix the oats, oat flour, 1/3 cup coconut sugar, pecans, baking soda, cinnamon, and vegan butter until crumbly.
Press two-thirds of the mixture into the prepared pan and bake for 10 minutes.
In a saucepan, simmer chopped pears, 1/4 cup coconut sugar, and water until the pears are tender; set aside.
In a medium bowl, whisk together the cream cheese, 1/4 cup coconut sugar, egg, and vanilla until smooth.
Spread the cream cheese mixture over the partially baked crust.
Top with the pear mixture and sprinkle the remaining crumble over the top.
Bake for 25-30 minutes until set and golden.
Cool completely before chilling and slicing into bars.
Notes
Store in an airtight container in the refrigerator for up to 4 days. You can use ghee in place of vegan butter if you are not dairy-free. Ensure the pears are firm but ripe for the best texture.
