Ingredients
2 tbsp unsalted butter
2 1/2 cups pecans, finely chopped
1 cup unsalted butter, softened
1/2 cup brown sugar
2 cups all-purpose flour
1/2 tsp salt
1 1/2 cups brown sugar
3/4 cup light corn syrup
2 tbsp melted butter
1 tsp vanilla extract
Instructions
Preheat oven to 350°F and grease a mini muffin pan.
In a skillet, melt 2 tbsp butter, add pecans, and toast for 10 minutes until golden and fragrant.
In a bowl, cream 1 cup softened butter with 1/2 cup brown sugar until smooth.
Add flour and salt to the butter mixture and mix until a dough forms.
Press about a tablespoon of dough into the bottom and up the sides of each mini muffin cup.
In a separate bowl, whisk together 1 1/2 cups brown sugar, corn syrup, 2 tbsp melted butter, and vanilla.
Stir the toasted pecans into the filling mixture.
Spoon the pecan mixture into the prepared crusts.
Bake for 15-20 minutes until the edges are golden brown.
Allow to cool in the pan before removing.
Notes
Store in an airtight container at room temperature for up to 3 days. Ensure the muffin tin is well-greased to prevent sticking. Toasting the pecans is a critical step for flavor depth.
