Description

Indulge in the ultimate comfort of bakery-style Pecan Sticky Buns. These luxurious treats feature a pillowy, buttery brioche-style dough swirled with cinnamon sugar, baked upside down in a decadent, velvet-smooth caramel sauce infused with toasted pecans. Perfect for slow weekend mornings or holiday gatherings, these buns offer a harmonious blend of crunchy textures and soft, airy crumbs that will leave you wanting more.

Ingredients

Scale

3/4 cup warm whole milk (115-125°F)
1 tablespoon plus 1 teaspoon instant yeast
1/3 cup granulated sugar
2 teaspoons salt
5 large eggs (room temperature)
1/2 cup very soft unsalted butter
3 cups bread flour
2 cups all-purpose flour
1/2 cup unsalted butter (for topping)
2/3 cup packed light brown sugar (for topping)
2/3 cup heavy cream
1/3 cup pure maple syrup
1 1/2 cups chopped pecans
1/2 teaspoon salt (for topping)
1/2 cup very soft unsalted butter (for filling)
3/4 cup packed light brown sugar (for filling)
2 tablespoons ground cinnamon

Instructions

In a large bowl, combine warm milk, yeast, and sugar, allowing it to bloom for 5 minutes.
Mix in salt, eggs, and soft butter, then gradually incorporate the flour to form a dough.
Knead the dough until smooth and elastic, then let it rise in a warm spot until doubled in size.
For the topping, melt butter, brown sugar, heavy cream, syrup, and salt in a saucepan, then pour into a 9×13 inch baking pan and sprinkle with pecans.
Roll out the risen dough into a rectangle, spread with butter, cinnamon, and brown sugar, then roll tightly into a log.
Slice the log into equal pieces and place them cut-side down into the prepared pan.
Let the buns rise for a second time until puffy.
Bake at 350°F until golden brown, then immediately invert onto a platter to coat the buns in the caramel.

Notes

You can prepare the rolls up to the point of placing them in the pan the night before and refrigerate them, letting them rise at room temperature before baking in the morning.
