Description

Experience the ultimate autumn comfort with Pumpkin Pie Pecan Bars. These delightful treats offer the smooth, creamy essence of a traditional pumpkin pie paired with a wholesome, buttery oat base and a crunchy, maple-kissed pecan topping. Perfectly portable and far simpler than a classic pie crust, these bars combine warm spices like cinnamon with the rich, earthy flavors of pumpkin. They are the ideal soul-warming project for cozy afternoons, potlucks, or family gatherings, delivering elegant, shareable squares that capture the very heart of the harvest season.

Ingredients

Scale

1 cup spelt or all-purpose flour
1 ¾ cups rolled oats
â…“ cup coconut sugar or brown sugar
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup cold unsalted butter, cubed
4 large eggs, lightly whisked
2 cups pureed canned pumpkin
½ cup pure maple syrup
1 teaspoon vanilla extract
1 teaspoon ground pumpkin pie spice
1 ½ cups chopped pecans

Instructions

Preheat your oven to 350°F and line a 9×13 inch baking pan with parchment paper.
In a large bowl, whisk together flour, rolled oats, sugar, cinnamon, and salt for the base and topping.
Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Reserve 1 cup of this mixture for the topping and press the remainder firmly into the bottom of the prepared pan.
Bake the base for 15 minutes, then remove from the oven.
In a separate bowl, whisk together the eggs, pumpkin puree, maple syrup, vanilla, and pumpkin pie spice until smooth.
Pour the pumpkin filling evenly over the partially baked crust.
Sprinkle the reserved oat mixture and the chopped pecans over the top of the filling.
Return to the oven and bake for an additional 25-30 minutes or until the center is set.
Allow to cool completely before cutting into squares.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling. Bars can be stored in an airtight container in the refrigerator for up to 5 days. For a vegan-friendly version, substitute eggs with two flax eggs and ensure butter is plant-based.
