Description

These Pumpkin Pudding Cookies are the ultimate autumn comfort treat, blending the earthy warmth of pumpkin puree with the velvet richness of instant pudding mix. With a soft, chewy texture and pockets of semi-sweet chocolate chips, each bite offers a delightful contrast of spiced pumpkin and decadent cocoa. Perfectly moist and incredibly easy to whip up, these cookies capture the nostalgic essence of fall afternoons, making them an ideal addition to your family table or a thoughtful gift for neighbors.

Ingredients

Scale

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1 package (3.4 oz) instant pumpkin spice pudding mix
1 large egg
1 teaspoon vanilla extract
1/2 cup pumpkin puree (not pumpkin pie filling)
1 1/2 cups semi-sweet chocolate chips

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the instant pudding mix, egg, vanilla extract, and pumpkin puree until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the semi-sweet chocolate chips.
Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are just set but the centers remain soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure your pumpkin puree is 100% pure pumpkin, not pie filling. If you cannot find pumpkin spice pudding mix, you can substitute with instant vanilla pudding and add an extra teaspoon of pumpkin pie spice to the dry ingredients. Store in an airtight container at room temperature for up to 4 days to maintain their chewy texture.
