Description

Indulge in the heartwarming essence of autumn with these Pumpkin Spice Magic Cookie Bars. This seasonal twist on the classic seven-layer bar features a buttery graham cracker crust, a velvety spiced pumpkin custard filling, and a decadent topping of toasted coconut, crunchy walnuts, and rich chocolate chips. Perfectly balanced and deeply comforting, these bars offer a harmonious marriage of textures and warming spices, making them the ideal treat for chilly afternoons or festive gatherings with loved ones.

Ingredients

Scale

1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 14-ounce can sweetened condensed milk
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
1 cup semi-sweet chocolate chips
1 cup sweetened shredded coconut
1 cup walnuts, chopped

Instructions

Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
In a medium bowl, combine the graham cracker crumbs and melted butter, mixing until moistened.
Press the crumb mixture firmly into the bottom of the prepared pan.
In a separate bowl, whisk together the sweetened condensed milk, pumpkin puree, and pumpkin pie spice until smooth.
Pour the pumpkin custard mixture evenly over the graham cracker base.
Sprinkle the chocolate chips, shredded coconut, and chopped walnuts in an even layer over the pumpkin mixture.
Bake for 25 to 30 minutes, or until the edges are golden brown and the center is set.
Allow the bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

Ensure the pumpkin puree is not pumpkin pie filling to maintain control over the sweetness.
Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
For cleaner cuts, chill the bars in the refrigerator for at least two hours before slicing.
