Description

These decadent, bite-sized Pumpkin Truffles capture the essence of autumn in a single creamy bite. Featuring a luscious pumpkin cheesecake filling infused with warm spices and graham cracker crumbs, each truffle is encased in a smooth, crisp chocolate shell. Perfect for holiday gatherings or a quiet treat with tea, these simple-to-make confections are a heartfelt celebration of seasonal comfort and tradition.

Ingredients

Scale

4 ounces cream cheese, softened
3 tablespoons powdered sugar
1/3 cup pumpkin puree
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1 1/2 cups graham cracker crumbs
2 cups chocolate chips (milk or semi-sweet)
2 tablespoons pecans, finely chopped (optional)

Instructions

In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
Stir in the pumpkin puree, pumpkin pie spice, and cinnamon until well combined.
Fold in the graham cracker crumbs until the mixture is uniform and holds together.
Place the bowl in the refrigerator for 30 minutes to firm up.
Scoop small portions of the mixture and roll them into spheres using your hands.
Place the spheres on a parchment-lined baking sheet and freeze for 15 minutes.
While the truffles chill, melt the chocolate chips in a microwave-safe bowl in 30-second intervals.
Dip each chilled sphere into the melted chocolate, coating completely, then place back on the parchment paper.
Top with optional chopped pecans before the chocolate sets.
Refrigerate until the chocolate coating is firm.

Notes

Store the truffles in an airtight container in the refrigerator for up to one week. You can also drizzle white chocolate over the finished truffles for an elegant presentation.
