Description
Raspberry Cheesecake Crumble Bars are a delightful dessert featuring a buttery graham cracker crust, creamy cheesecake filling, and a sweet-tart raspberry topping finished with a crumble layer.
Ingredients
- 1½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1½ cups fresh raspberries
- 1 large egg
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/4 teaspoon cornstarch
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. In a bowl, mix graham cracker crumbs, melted butter, sugar, cinnamon, and salt. Press three-quarters into the bottom of the prepared pan for the crust.
3. In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over the crust.
4. Cook raspberries with sugar, cornstarch, and lemon juice in a saucepan over medium heat for about 5–7 minutes until thickened. Spoon over cheesecake layer.
5. Sprinkle reserved crust mixture on top as crumble. Bake for 30–35 minutes or until set and lightly golden.
6. Cool completely in the pan before refrigerating for at least 2 hours. Slice into bars and garnish with fresh raspberries if desired.
Notes
Use fresh raspberries for the best flavor and texture.
Allow the bars to chill fully before slicing for clean cuts.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
